Father’s Day

First and foremost, Happy Father’s Day to all of the Dad’s out there and all of the Mom’s filling those Dad shoes, it’s no easy feat. But of course, the happiest of days to my amazingggggggg Husband who has been THE most amazing Dad to Brandon in the last three months. I knew he would be fabulous but I didn’t realize just how great he would be with our little guy. Brandon is going to have some BIG shoes to fill one day but he already has an amazing role model – both literally and figuratively, but he’s on the road to both. Happy Day to my Dad and Kevin’s Dad as well who we got to spend the weekend with while in Rhode Island!

I spent last week doing Arts & Crafts…having a photo-shoot with an infant and taking his footprints is definitely no easy task, but somehow we pulled it off.

IMG_5008We also had some fun on Saturday making a stepping stone for Nana and Papa’s house. Brandon was chill as could be while I was jamming is poor little feet down into the cement.

Apparently it was a week(end) of footprints because Brandon also made Kevin a gift at Daycare.

IMG_4903In other news (unfortunately I can’t post videos), Brandon has officially reached big boy status and has mastered rolling over from his belly to his back…unfortunately for us, he hates being on his back and lets us know! He’s also trying very hard to sit up by himself…can we slow down this growing up thing? Little man just wants to look around because he MIGHT miss something (totally not my child or anything…). He’s sleeping great and eating us out of house and home already.

We love you Daddy. Brandon and I are so lucky to have you all to ourselves!

3 Months and Pool Fun

IMG_4894Honestly, where has the time gone? My baby boy is 3 months old…that’s 13 weeks!!! AH! He’s getting bigger and bigger everyday and outgrowing clothes like it’s his job! We don’t have another checkup until he’s 4 months so there’s no exact weight. Brandon is still in Size 1 diapers even though he is well over the “poundage” range they give. We almost get a full nights sleep and he’s eating like a champ.

This weekend was our first trip into the pool! We bundled him up in his swim trunks (which I was hoping he didn’t outgrow yet), rash guard and sun hat. Our Pediatrician said we could put sunblock on him but be sure it was free of all the parabens, etc. We cover him up as best we can so it’s less sunscreen we have to use. He didn’t necessarily LOVE the water, but he didn’t hate it either, he was pretty content. Just a bigger, colder bath.

Saturday night Kevin and I wanted to go out to dinner but couldn’t find a babysitting so Brandon came along. I tried to wear him in the Bjorn but he’s getting MUCH too alert now and just wants to look around as much as possible so after a brief nap, we ended up just holding him on our laps. He was SUCH a good little man and stayed up past his bedtime. We got home, gave him a bath and he slept from 8pm-8am with one little wake-up to eat.

And just a quick shout out to our good friends Agnes and Kyle who welcomed twins today! Congratulations and we cannot wait to meet them!!

Cooking and Sicknesses

I got pregnant almost a year ago and haven’t gotten sick once. I start back to work after having Brandon and immediately get sick with a cold! I was hoping my allergies were creeping back but sadly that is not the case. Brandon has been coughing for about a week, I’m thinking maybe we got something from Daycare?…who knows. He had a difficult Sunday and just wanted to be held and snuggled. Today, I was home sick on Monday with fever and chills and now Kevin is coming down with it. Life with a child.

In other news, if it wasn’t for my meal prepping on Sunday this week would have REALLY sucked when dinner rolled around. Here’s what was on the menu this week!

Breakfast: Egg and Sausage Casserole with onions peppers and black beans.

IMG_4828Monday: Eggplant Boats (sorry no picture, we were too hungry). Cut and Eggplant in half and scoop out the seeds, fill it with cooked chicken sausage, pasta sauce and mozz. Bake for about an hour and voila. (here’s the sausage)

IMG_4825Tuesday: Chicken in Crescent Rolls. WHAT! Unroll Crescent Dough and keep the two triangles together as a rectangle. Fill with chicken, cheese and ranch dressing, roll up and bake for 10 minutes. These were easy and really tasty! Try with sauce and pepperoni or steak and cheese.

IMG_4834 Wednesday: Zucchini Pasta with Cauliflower Sauce. Another winner. Slice zucchini thin on a mandolin and boil. Boil cauliflower then puree with milk, greek yogurt, cornstarch, butter, garlic, chives and parsley. Top Zucchini and serve.

IMG_4824Thursday: Lasagne Soup! I made this Wednesday night while I was prepping some meals to freeze for a friend who is having TWINS next week. 🙂 Figure I could get all my cooking done in one night. My ‘soup’ sat overnight so looks more like Lasagne Chili since the noodles absorbed a lot of the liquid, but oh so good.

IMG_4843Thank goodness tomorrow is Friday…I have no meals planned in hopes that maybe I don’t have to cook! It’s been a long, tiring and exhausting week and I need a break for sure. Time to start planning next weeks menu.

Graduation Party and Sleeping through the Night!

Another great weekend spent with family and friends who came down for Kevin’s Graduation Party. We lucked out with a beautiful day and I/We thank everyone for making the trip and helping out with food!

This week was a big change for us as I started back to work and Brandon started Daycare. Things have gone smoothly and he has been a good boy. We are really going to like Daycare as it is in-home and he can get the attention he needs. What’s even better are the pictures I get throughout the day of my little angel.

Our little guy has been sleeping in his crib (finally) at night! No more swing for him. We just love him! He’s still waking up once, typically around 2:30/3am, eats and right back to sleep. Daycare certainly tired him out yesterday. <3

IMG_4786Our little belly sleeper is a ninja! He was put to bed horizontally and woke up vertical.

Life is getting back to normal around here! Loving life!
